JOB OVERVIEW:   This job opening for the Lead Brewer of Payette Brewing Company is a rare opportunity to work at a bad-ass brewery on state-of-the-art equipment. You will brew beer for distribution all over the Pacific Northwest. Our facility boasts a killer Tap Room, a fun Beer Garden, and 22,000 square feet of pristine production space. REPORTS TO: Head Brewer

Brew wort based on production schedule and in accordance with Payette recipe specifications and brewing SOP’s.

Perform quality checks throughout the brewing process to create a high quality and consistent wort.

Work with co-packing partners to scale, develop and adjust beer recipes to brew on Payette’s brewing system.

Brew wort for co-packing partners based on agreed upon recipes and specifications.

Responsible for Recipe/Formula creation in Vicinity Brew for Wort, Fermentation and Brite Beer.

Responsible for batch posting in Vicinity Brew as it relates to product touch points, specifically Wort Production.

In conjunction with Head Brewer, Quality Control and Brewery Sensory Panel, continuously evaluate existing products and strive to improve the flavor, quality, and shelf life of Payette products.

Work with Head Brewer, Sales and Marketing departments to develop innovative products to sell in the Tap Room and general market.

Develop beer recipes for new and innovative Payette products based on ideas discussed within the company.

Assist in the blending of ready-to-drink cocktails based on Payette RTD recipes and any co-packing RTD recipes.

Manage the Quality Control and Cellar Team

Oversee the quality control and cellar team ensuring timely completion of tasks.

Assist Head Brewer in raw material ordering based on production schedule and forecasts. These materials include grains, hops, yeast, and any other adjuncts used in the brewing, fermentation, and maturation aspects of beer production.

Head Brewer may hand off some or all the raw material ordering to Lead Brewer at his/her discretion.

Assist QC Lead in quality control tests throughout brewing.

Assist Head Brewer in attaining Formula Approval through the TTB when necessary.

Backup for Head Brewer on formula creation in Vicinity Brew.

Backup for Cellar Lead in posting cellar transactions in Vicinity Brew.

Become a part of the brewery sensory panel and get trained on all parts of the sensory program.

Monitor beer quality through the process to keep beer in spec, identify off flavors and adjust as necessary.

Compensation/Salary: $20.00 - $27.00 per Hour
